The max amount of time you have to clobber them is 4 times, and for that you will recieve up to 13XP and 35 coins, but it can also COST up to 4 food and 4 energy to defeat it!While clobbering you may also find an item from the Groundhog Collection

There is also a 1 in 100 chance of finding a Ghost Groundhog, a left over from Halloween '10, which you will also have to clobber to be able to continue along with your work. Luckily clobbering them will also count if you have any active missions, so that's 2 for the price of 1!
When attempting to Groundhog rustle for these missions remember that they don't really like Flax, Sunflowers and Cotton.
If you find that you have to clobber more Groundhogs than you have energy, try to clobber him into a space that won't affect your gameplay and leave him there. You can only have 1 groundhog at a time so this will stop any more popping up!
